At BYRSA, olive oil is more than a product. It’s our passion and purpose. We produce some of the most polyphenol-rich olive oil in the world, with antioxidant levels reaching up to 2,200 mg/kg, verified by independent lab testing.
Our oil is crafted through precision farming, early harvesting, and fast cold-pressing, all designed to preserve maximum nutrients and flavor. Grown on our certified organic farm in Tunisia, our olives thrive in mineral-rich soil, nurtured by old-growth trees and natural spacing.
We harvest early while olives are still green, rich in oleocanthal and oleacein, compounds
celebrated for their anti-inflammatory and heart-health benefits. Unlike most producers, we
press our olives within hours of harvest to protect both taste and nutrition. The result is a
bold, peppery, and vibrant oil with notes of artichoke, green almond, and a clean, lasting
finish.
We also craft cold-pressed infused olive oils the traditional way by co-pressing whole fruits
and herbs like mandarin, lemon, rosemary, thyme, basil, and mint. No extracts. No additives.

I grew up in Tunisia, where olive trees are not scenery — they are memory. Their silvery leaves, the scent of the grove at dawn, my mother's bread dipped in oil pressed that same morning. That was my first lesson in what real olive oil tastes like.
